Chicken & Spinach Salad (serves 4)


Ingredients

4 skinless chicken breasts
450 ml/16 fl oz of chicken stock
225g/8 oz spinach leaves
Salt & Pepper for seasoning
Croutons to garnish
4tbsp low-fat natural yoghurt
1tbsp of raspberry vinegar
2 tsp of clear honey


Method

  1. Place the chicken breasts in a pan, pour over chicken stock, bring to the boil and cover. Simmer for 15-20 mins, turning chicken half way through, once chicken is cooked allow to cool.
  2. Arrange spinach on plates along with the chopped onion, leave to chill.
  3. Drain the cooked chicken and pat dry. Slice the chicken breasts thinly and arrange on top of spinach and onion.
  4. For the dressing, mix all remainder of ingredients in a bowl and drizzle over the top. Add croutons.
